Sushi Redneck StyleFeatured in In the Daily Buzz - Jan 14, 2011 Kristen Cook International cooking in a small town? Certainly takes a little creativity, but something can usually be accomplished.
Sushi is amazing. I have never been to Japan. Still, ever since I first broke cheap wooden chopsticks over cheap Calgary foodcourt sushi when I was eighteen it has been one of my favourite “experience” foods. It remains so whether I’m sitting on a Thai curb questioning the raw fish I’m eagerly eating from a street vendor or sitting in a sushi bar eating sashimi with friends before going to a ballet. The first time I ever made it was in a QC kitchen, being taught by a vivacious French girl who wore Sushi Jazz tank-tops.
Sashimi grade fish can’t be found here. Still, a little smoked salmon, shrimp or crab can do wonders in its place. I invested in a few rolling mats, although they’re not really necessary. You will need nori (the seaweed paper from any grocery store), the filling, as you choose, and rice. The rice is obviously essential. Unless you’re a purist any white rice cooked ’till sticky and mixed with vinegar will usually work. Also, wasabi, pickled ginger, soy sauce and a very sharp kitchen knife.
It's an social event now, here at home. I mark it on my calendar, plan the shopping, invite others to take part in the sushi novelty. Redneck style.
